Changing Up The Shrimp Boil

Well, if you follow me on Facebook and Instagram you know I’ve been up to my latest project this weekend.  Crap Room to Craft Room decorating.  I’ll share some “where I am now” in here pictures with you later this week.

While I was working on the craft room, G and Bracken offered to do supper tonight.  They both decided to do a crawfish and shrimp boil because we have lots of fresh corn from G’s parents garden.  We’ve already been eating it several times this week, but they wanted to cook it in a different way.  We went to the grocery store after mass to buy what we needed.  Guess what?  Crawfish is out of season!  Fresh corn is in, but crawfish is out.  So we opted for just a shrimp boil.

We are trying to watch the carbs around here, so I was trying to think of something to substitute for the potatoes.  We already had corn and I didn’t want to load up on the carbs.  What would hold together and cook up like a potato?  Cauliflower!  We added it in place of the potatoes and I have to say that we actually like it more.  Here is how it cooks up.shrimpboiltall

It is absolutely yummy!  When doing your boil, you start with the corn, then add the cauliflower about 4 minutes before you add your shrimp.  I hope you try it, because it is worth it!

    • It cuts down on the carbs, and actually I like the cauliflower better than potatoes. I hope you get a chance to try it.
